Whole animal butchery is the process of sourcing, slicing, and utilizing the entire animal for meat. We work with local (NY + NJ) family-owned farms. All animals are pasture-raised without any growth hormones or antibiotics. For us, sourcing responsibly means that these animals are locally raised through sustainable and organic practices.
The benefits of whole-animal butchery are massive. Offering whole animals means our butchers have to be knowledgeable. They know your meat in and out—how to cut it and exactly where it comes from. This makes it easy to learn about the sustainability of the livestock and agriculture of the local farms as well as the quality of the meat. By using every piece of the animal, whole animal butcher programs reduce waste and honor the integrity of the animal. In addition to our meat cuts, Jubilee offers dry-aged beef, house-made sausages, chorizo, and burgers.
We proudly work with Rosenkrans Natural Beef Co. to source beef, Gibson Family Farms for pork and lamb, and Fossil Farms for poultry. It’s important for us that animals are humanely and pasture-raised, foraging for their food, and reared through organic practices. Working with local farms that practice conscious and sustainable livestock production and farming is all part of laying the foundation for a sustainable food system.
Rosenkrans Natural Beef Co.
Rosenkrans Natural Beef’s cattle are reared naturally without the use of antibiotics or growth hormones across a network of family farms in 9 New York counties. The natural beef is then processed in Central NY and all Rosenkrans meat is NY Grown certified. Purchasing from RNB means supporting a network of local farmers, truckers, and processors.
Gibson Family Farms
Gibson prioritizes the health of the land and the animals through various restorative and regenerative agricultural practices. They have pledged their land under a Permanent Perpetual Easement with the Agricultural Stewardship Association. This signifies that the farmland will never be developed. Through permaculture, polyculture, silvopasture, and rotational grazing, Gibson Family Farms is dedicated to a sustainable agriculture practice.
Fossil Farms
All animals are raised on pasture without any use of growth hormones, subtherapeutic antibiotics, or steroids. They are fed a diet of natural forage and a blend of all vegetarian grains when necessary. Fossil Farms is committed to maintaining organic and regenerative livestock and agricultural practices with a responsibility to environmental impact.
